Lamination begins at 4 a.m. — twenty-seven layers of Normandy butter folded into Wildfarmed flour, rested, turned, rested again. Rosa says a croissant should shatter, then sigh. We hold every tray to that standard.

The stone oven runs hotter and older than everything else in the building. Sesame-crusted simit, su böreği layered like linen, and baklava rested overnight in Antep syrup — recipes carried from Kadıköy, not invented in a test kitchen.
